Aloo Methi

   
 
       
   

Baby potatoes and fresh fenugreek leaves cooked together with whole red chillies, cumin seed, coriander seed and garlic. This north Indian winter delicacy adds nutrition to your daily diet and has health benefits too.

INGRIDIENTS

Tomato
Ginger
Garlic
Cumin seeds
Coriander seed, crushed
Red chilli whole
Green chili
Turmeric powder
Coriander powder
Red chili powder
Salt
Oil
Ghee

    Methods:  
   
 
THE POTATOES
Wash and cut the potatoes with skin into half.
 
 
THE FRESH METHI
Remove the leaves from the stems of methi and chop them. Wash in fresh water 2 to 3 times and drain it.
Boil water put in excess salt and let it boil. Add washed methi and blanch it for 5 minutes. Remove and put it in the cold water, drain, and squeeze and keep aside.
 
 
THE VEGETABLES
Peel, wash and chop the onion. Wash and chop the tomatoes. Peel, wash and chop the ginger and garlic. Wash, remove the stem and chop green chili into fine brunoise.
 
 
           
  Cooking:
 
 
Heat oil, add red chillies whole, cumin seeds and crushed coriander seeds. Add chop onions.  
 
Sauté till golden. Add the chopped ginger and garlic at this stage.  
 
Add coriander, turmeric and red chili powder. At this time.  
 
Add the chop tomatoes and sauté. Add salt.
 
Add the potatoes at this stage and sauté for five minutes.
 
Add enough hot water to cover the potatoes.
 
Cook till the potatoes are one third done and add balanced methi at this stage.
 
Simmer for 5 minutes.
 
Add ghee, stir and serve hot.
